Wahaca rolls out new summer menu with vibrant dishes starting at less than £7

Mexican restaurant chain Wahaca has unveiled its new summer menu, bringing a taste of Mexico to the UK’s warmer months.

The seasonal offerings feature fresh, sustainable produce sourced from British suppliers.

The menu is designed to deliver “beaming rays of Mexican sunshine” to British diners as the days grow brighter and appetites turn towards lighter, seasonal fare.

Each dish showcases the vibrant flavours and ingredients characteristic of authentic Mexican cuisine.

Cactus takes centre stage in one of Wahaca’s standout new offerings, the Griddled Cactus & Courgette Tacos, priced at £6.95.

This nutritious Mexican staple is paired with roasted courgettes and tossed with fresh lime and a hint of chilli.

The tacos are finished with fresh cheese and crispy corn strips for added texture. Described as “tangy, tasty and succulent in every way,” these tacos celebrate the culinary versatility of cactus in authentic Mexican dining.

Another new addition is the Prawn Aguachile, a seafood dish similar to ceviche that originates from Sinaloa in north-west Mexico.

Priced at £8.95, it features prawns marinated in habanero chillies and fresh lime for a zingy, summery freshness. The dish is served with avocado, salsa macha and crisp tostadas, offering a light yet flavourful option perfect for the warmer months.

Each bite delivers the authentic coastal flavours of Mexican cuisine. For those looking to share a larger plate, the new Hibiscus Glazed Aubergine offers a vegetarian showstopper at £15.95.

Wedges of aubergine are roasted in hibiscus salsa until tender and slightly charred, creating a dish that’s “tasty, zesty and bursting with umami flavour”.
It’s served with dressed quinoa, avocado cream and homemade, nutty salsa macha. It is designed to be shared among friends.

Completing the meal options are Wahaca’s new Sunshine Bowls, starting from £13.50.

These wholesome bowls contain nearly 30 different plant varieties, including baby spinach, avocado, sautéed corn, Mexican-style ‘chiltatis’, pickled cabbage, quinoa, black beans and esquites. They come dressed with coconut-lime dressing and a crisp tostada.

Diners can choose to add free-range chicken, ‘Halloumi al pastor’ or garlic sweet potato to complete their bowl.
